For 11 incredible years, Will called Thailand his home. During this time, he had the privilege of immersing himself in the vibrant Thai culture, living in Bangkok, exploring local markets, and assisting in running his partner’s family's restaurant in the heart of North East Thailand.

Upon returning to the UK, Will's path took an unexpected turn. Inspired by a newfound interest in health and wellbeing, he embarked on a journey that would ultimately lead him to create "Well Juiced," a thriving business dedicated to nourishing both body and soul.


As fate would have it, the challenges brought by the COVID-19 pandemic paved the way for another culinary adventure. Will began cooking for friends and family, showcasing the authentic flavours and traditions he had learned during his time in Thailand. His culinary skill caught the attention of Noya at Noya's Kitchen, leading to a memorable collaboration.


Noya was so impressed by Will's cooking and his ability to achieve the perfect balance between the Thail ingredients and flavours,  that she introduced him to her private dining clientele, igniting a culinary partnership that would change the course of his culinary journey.



The Thai Thali concept is a unique and immersive dining experience that brings the rich tapestry of traditional Thai flavours to life with a contemporary Anglo influence. It's a culinary journey that seamlessly marries the authenticity of Thai cuisine with modern innovation, creating a tantalizing fusion of flavors, aromas, and presentation.


Will's vision has been to bring a contemporary twist to the traditional Thai elements and dishes, drawing upon his experience from working Thai kitchens, his English heritage and inspiration from world travel. From this the 'Thai Thali' concept was born!

The Thai Thali concept follows the tradition of presenting a Thali, a diverse selection of small servings, each representing a distinct Thai dish. This approach allows guests to explore a variety of flavours and textures in one meal, creating an exciting and diverse dining adventure.

At the heart of the Thai Thali concept lies a commitment to the highest standards of culinary excellence and authenticity. This dedication extends to the sourcing of ingredients, where each component tells a story of quality, sustainability, and culinary craftsmanship.


We collaborate with specialist Thai suppliers who are experts in sourcing and providing genuine Thai ingredients. From fragrant Thai herbs and exotic spices to unique condiments and essential components like fish sauce and palm sugar, our partnership with these suppliers guarantees the authenticity of our dishes.


While we cherish the authenticity of Thai ingredients, we also celebrate the availability of fresh local produce. We source seasonal vegetables, herbs, and fruits from local farmers who are as passionate about sustainability and quality as we are. This not only enhances the flavour of our dishes but also supports the local community.


When it comes to meat, we leave no room for compromise. We've partnered with Ruby and White, a renowned and trusted local butcher known for their commitment to sourcing high-quality, ethically raised meats.


We hold the values of ethical and sustainable sourcing in high regard. All our meat and poultry are sourced from free-range producers, ensuring that the animals are treated with care and respect, and that the end product is of the utmost quality.
